Pinot Noir

Referred to as a ‘Pinot Noir paradise,’ Pinzon is considered one of the best sites for the cultivation of Pinot Noir in all of Italy. From our 1,200 m² (just shy of 13,000 ft², about the size of an Olympic swimming pool) vineyard comes our annual and modest 600-bottle production of Himmelstor. The must is fermented in a wooden vat and the wine then aged in barrique.

Nutty, spicy, and lightly smoky aromas are the first to emerge from the glass, with notes of juniper, dried berries and flowers following close behind. Nuances of tobacco and earth. Ripe fruit in the mouth is embraced by notes of tobacco and nuts, with slightly drying, fine-grained tannins providing an elegant structure. Spice and salt play in the background, with a touch of smoked meat, all brought together in a juicy, harmonious finish.
